It's what folklore, traditional medicines and home remedies were made of before coconut oil. In earlier times, garlic was purported to cure smallpox, snake bites, digestive disorders, childbirth, and used to boost strength and virility.

You can taste a strong, sharp, spicy bite and it is very powerful stuff. Garlic is a source of vitamin C, vitamin B6 and manganese, selenium and many other minerals.

  1. Black garlic: Best for cheese platters and eating raw as condiment. It's white garlic that's aged and turned a sweet, tart balsamic vinegar flavour. 
  2. Purple garlic: this may be purple and is still very potent with smaller bulbs. It's a weapon for stir fry, and all main dishes.
  3. Garlic: Very potent, and it can be stored for a long time. It's whiter and the bulbs are bigger. Use in any recipe that calls for garlic. Go easy on it raw (or bring your mints) as it is a powerful.

Did you know?
It is closely related to onions, shallots and leeks. Garlic is a plant in the Allium (onion) family. There's ~ 10–20 segments (cloves) in a bulb.

Top Tip
Garlic is high in FODMAPs. You can remove the inner core / green shoots to reduce the irritation on your digestive system, or simply let your garlic soak in oil and use the oil in cooking (not the garlic flesh).
